Meat Kalio ( Kalio Dagiang )

Kalio is the name of semi-finished rendang, which was still brown. Rendang actually sold most of the restaurant / cafe outside of Padang in West Sumatra is kalio. If kalio dried with low heat it will be colored black and just called rendang kalio same basic ingredients with rendang, which is coconut milk, finely minced red pepper, ginger, laos onion garlic, lime leaves, bay leaves turmeric leaf. Rendang and kalio not use turmeric because it will make the textures are not good.

Materials kalio usually beef, chicken, beef liver or jengkol . Especially for the heart and not be gained from dry to rendang because it will make the material hard and unpleasant.
